Loaded Broccoli

Updated: Jan 17, 2022

Macro-friendly way to add some extra greens in, these are 10 out of 10! I tend to substitute my sour cream for plain greek yogurt as they are nearly identical in taste but greek yogurt has less fat and higher protein. Try this out when you're craving something cheesy but want to get some veggies in, too.

Serves: 4

Macros: 188 Calories per serving

10 g Fat

9 g Carbs

15 g Protein

Ingredients:

1 large head of broccoli

3/4 C fat free, plain greek yogurt

1 C finely shredded cheddar cheese

4 slices turkey bacon

1 Tbsp (14 g) EVOO

2 tsp salt

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp black pepper

Green onions chopped, for topping

The Run Down:

1) Preheat oven to 375 degrees

2) Wash and chop broccoli head into 1/2 inch pieces

3) Add chopped broccoli to a bowl and add EVOO. Toss well until broccoli is fully coated in oil

4) Add seasonings to bowl and toss well

5) Add to baking sheet evenly and place onto middle rack in oven for 35 minutes

6) While broccoli is cooking, fry turkey bacon. ( I use my airfryer, or you can fry in pan with nonstick spray).

7) After 35 minutes, remove broccoli from oven. Top with cheese, chopped bacon, plain greek yogurt and green onions.
